Crab Cakes

Ingredients

  • 4 tablespoons butter
  • 3 tablespoons white onion, minced
  • 1/2 cup celery, minced
  • 1 red bell pepper, minced
  • 3/4 cup breadcrumbs
  • 2 eggs, beaten
  • 2 cups pre-cooked crabmeat
  • 1/2 teaspoon dry mustard
  • 2 teaspoons parsley
  • 1 teaspoon thyme
  • 1 teaspoon tarragon
  • 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 lemon

Instructions

  1. Sauté butter, onion, celery and red bell pepper. In a large bowl, combine sautéed mixture with all remaining ingredients. Mix well and shape into patties.
  2. Bake in the oven at 300° for 20 minutes and allow to cool. Garnish with fresh squeezed lemon juice. Yields approximately 12 patties. Pre-cooked patties can be wrapped in parchment paper, frozen, and cooked as needed.
