Smoked Fish

In Gill's Rock at the top of the hill sits Charlie's Smokehouse. Charlie's Smokehouse in open in the winter on weekends and they ship year around. Owner Charlie Voight's dad started selling chubs on the dock in Gill's Rock in 1932.  Charlie worked alongside his dad until 1974 when his dad passed away.  Charlie and his wife Bonnie continued running the smokehouse and moved it to it's present location in 1988. They also added smoked whitefish and salmon and eventually made whitefish and salmon spreads (my favorite) Bonnie was there when we visited, but Charlie wandered in as well.

We bought some smoked whitefish and the salmon and whitefish spreads.  We were planning on a casual lunch for Sunday so I decided to make a Smoked Whitefish Salad.  This is what I did:

Ingredients
1 1/2 pounds smoked whitefish, skinned and boned
1/2 cup minced red onion
1/2 cup minced celery
1 cup good mayonnaise
1 1/2 tablespoons freshly squeezed lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Directions
With your hands, flake the whitefish, being careful to discard all the skin and bones. In a medium bowl, gently combine the whitefish with the red onion, celery, mayonnaise, lemon juice, salt, and pepper. Taste for seasoning.
Serve the whitefish salad at room temperature on lettuce leaves or buttered toast.
