Crab Cakes

Crab cakes in a bowl


4 tablespoons butter
3 tablespoons white onion, minced
1/2 cup celery, minced
1 red bell pepper, minced
3/4 cup breadcrumbs
2 eggs, beaten
2 cups pre-cooked crabmeat
1/2 teaspoon dry mustard
2 teaspoons parsley
1 teaspoon thyme
1 teaspoon tarragon
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon cayenne pepper
1 lemon


Sauté butter, onion, celery and red bell pepper. In a large bowl, combine sautéed mixture with all remaining ingredients. Mix well and shape into patties.

Bake in the oven at 300° for 20 minutes and allow to cool. Garnish with fresh squeezed lemon juice. Yields approximately 12 patties. Pre-cooked patties can be wrapped in parchment paper, frozen, and cooked as needed.
