Roasted Pepper & Tomato Soup

Roasted Pepper & Tomato Soup


1/4 cup olive oil
1 medium onion, chopped
1-1/2 cup tomato sauce
1-1/2 cup canned diced tomatoes
3 cups water
1/2 cup flour, mixed with 1 cup cold water
1 tablespoon garlic, chopped
1/4 cup brown sugar
1/4 cup vegetable stock
3 large roasted red peppers (or 2 cups canned)
1/2 cup heavy cream
2 tablespoons liquid smoke
Black pepper and Tabasco sauce to taste



Sauté onion and garlic in olive oil over medium heat. Add tomato sauce, diced tomatoes and water. Add red peppers, liquid smoke, brown sugar and vegetable stock. Pour into food processor or use immersion blender and mix until smooth.

Simmer for five minutes and add heavy cream. Add pepper and Tabasco sauce to taste. Add flour and water mixture and simmer an additional five minutes.

Let cool. Serve with crackers.
